Turkey and Gravy and Stuffing, Oh My!

Those that know me, know that I LOVE sleeping in late.. yes I know it is not healthy and I think the reason why is that it is a reminder everyday that I truly do work for myself (mind you I could easily wear a poka dot bathing suit while I work to remind me of that, which would be a healthier habit, but I digress)…

The think is, when I do wake up early I am always so happy that I did.. I get more done before noon than what I usually do the whole day (except those all night sessions back in the day when I was frantically learning how to build my website and figure out how to launch this company… ah the good ole days!).

Anyway – last night when I got home from Dodgeball already pretty late, my friend and co-worker Ron mentioned that he was going to get up to volunteer on Venice Beach to help feed the homeless.

Great I said, “Count me in, what time?” – ooops. He than told me 6:30 (which I assumed 6:30pm!) — long story short and 3 cups of tea later, ensured one of my most memorable T days ever!

Where ever you are in this world, remember there are always things to be cherished and people that need some help. With much love, gratitude and understanding.

Can I Brew Kombucha with Tulsi? November 15, 2009

I have just purchased the Deluxe brewing kit and will start my first batch this weekend using the ingredients supplied.

I am a big fan of Tulsi tea and I am curious if that tea can be used to as a base form Kombucha tea. Since it is not a real tea plant, it is the from the Holy Basil plant, does K Tea need to be based on the “real” tea plant?

Hey Mark!

So here’s the skinny… you CAN brew kombucha with other herbs/botanicals besides tea (I travelled to south america personally to get the BEST yerba mate for my brew.. which is not tea along with Rooibos which I also recommend for brewing for those that wish to make caffeine free kombucha!***).

BUT (there’s always a but, but this is a skinny small but) – I recommend 2 things:

1. Brew for at least 2 months with tea (camellias sinensis to be fancy).. we have our organic secret fair trade tea blend on our site.. but in a pinch any TEA will be fine. After 2 months you can start experimenting with other things besides tea.. such as tulsi (which is great, I’m a big fan of Ayurveda!)

2. VERY IMPORTANT!! still keep a 50/50 ratio of tea in your mix. So for your specific question: use half tulsi and half tea (black,green,white,oolong,combination) — you will still get a different unique taste profile and benefits with the tulsi.. while ensuring you have enough nitrogen for you scoby provided from the tea.

Overfermented Brew Question November 15, 2009

QUESTION:

Ok, so I was out of town and had my wonderful fairy bottle my last and 2nd batch of my Kombucha. Problemo is that I have been gone for 3 weeks and I just got back and had a sip of what was left in my brewer. Ok, I felt like I just took a swig off of an apple cider jug. What should I do now? besides, cry. Do I clean my kombucha and cut it down to size and make a new batch of tea to add to what is in the brewer or should I just start all over and order anew.
Please help turn my frown upside-down.

ANSWER:

cool! here’s the answer.

First off.. that crazy fermented k is still way good to use.. if it is too strong simply add about an ounce or two to a 32 ounce water bottle and SIP throughout the day. It will not taste like the fizzy joy you have enjoyed in the past but your body will actually be getting some specific organic acids that only form past day 15 of brewing!!

Now if it is still crazy hard to drink under any conditions, over fermented k tea can still be enjoyed externally… bath wash, great for skin burn, and a kick ass hair remedy.. click here to check out this vid I did 2 years ago..

Having crazy over fermented tea is nice to have to use as starter especially during winter, because it gets that ph nice and low from the get go to avoid yucky pathogens getting in there.

So you can start again and simply save 10 to 15% of the starter and begin anew with fresh sweet tea and the scoby.
