Below is what one of our kombuchaholics wrote me and with her permission I am sharing it with the rest of you!! Thanks Vicki!

Dave,

I am in the food manufacturing business. This sounds like one of those silly
regs that makes manufacturers crazy. So, they now have a huge expense in
that none of their existing labels are any good (very expensive, all those
colors and they have to toss them) and they have to make new labels. They
had to ship back product and reship to the store plus the loss of sales
while it’s off the shelf. This is a really big deal for all those Kombucha
manufacturers. Of course, if they were smart, they have insurance and it
should cover the recall. This shouldn’t affect you in any way what so
ever, this is just a glitch and my guess is, the Kombucha will be back on
the shelves fairly quickly with the revised label.

All that said, thank goodness we have our home brewing system! We actually
started a second brewer with one of the baby scoby’s so now, we have as much
as we can possibly drink and we owe it all to you! Many thanks,

Dave,

Found out more about the pulling of the Kombucha. I was in my health food
store today and they are still carrying. The letter she got from the FDA was
about alcohol content and EXCISE TAXES! We should have known this came down
to money. The FDA is testing Kombucha to see if there is enough alcohol in
it to warrant the special labels and the alcohol tax-plus the stores would
have to have a license to sell it! If it has less than non-alcoholic beer,
hopefully it will pass the test. In the meantime, you may see sales shoot
up!

First off it is so awesome to see other people (especially from our kombucha community), get so involved. Secondly.. yes! sales have been off the charts.. and we are BACK ORDERED for about a week or two. Please still order as we are fulfilling the orders on a first come first serve.. so if you keep waiting it will only be longer.. that said I refuse so ship out anything (especially cultures) until they are full grown and super hero healthy!! I do not care if I loose sales.. as I know I will gain long term awesome loyal customers (just go ask the crazy kombuchaholics that have been with me since the get go.. YOU. GUYS. ROCK!).

Here I am doing my best to fild the sunset off of one of the several awesome beaches of Thailand (kind of puts Santa Monica to shame!) –

Of course, I FORGOT THE CAMERA… so after sprinting back to get it I realized 3 things:

1. I need to work on my cardio training (guess dodgeball doesn’t cut it)
2. I missed the sunset
3. Thailand, so far anyway, does not have kombucha tea.. hmmm you thinking what I’m thinking?

Overfermented Brew Question November 15, 2009

QUESTION:

Ok, so I was out of town and had my wonderful fairy bottle my last and 2nd batch of my Kombucha. Problemo is that I have been gone for 3 weeks and I just got back and had a sip of what was left in my brewer. Ok, I felt like I just took a swig off of an apple cider jug. What should I do now? besides, cry. Do I clean my kombucha and cut it down to size and make a new batch of tea to add to what is in the brewer or should I just start all over and order anew.
Please help turn my frown upside-down.

ANSWER:

cool! here’s the answer.

First off.. that crazy fermented k is still way good to use.. if it is too strong simply add about an ounce or two to a 32 ounce water bottle and SIP throughout the day. It will not taste like the fizzy joy you have enjoyed in the past but your body will actually be getting some specific organic acids that only form past day 15 of brewing!!

Now if it is still crazy hard to drink under any conditions, over fermented k tea can still be enjoyed externally… bath wash, great for skin burn, and a kick ass hair remedy.. click here to check out this vid I did 2 years ago..

Having crazy over fermented tea is nice to have to use as starter especially during winter, because it gets that ph nice and low from the get go to avoid yucky pathogens getting in there.

So you can start again and simply save 10 to 15% of the starter and begin anew with fresh sweet tea and the scoby.

Below is another personal success story from one of our customers. Though we are not allowed by the FDA to make any claims, and you should always consult with a Medical Doctor if you have specific questions regarding your health, I find personal stories like this one, truly inspirational!

The great thing is that this person at first had her reservations about brewing at first. But like many of us, soon realized just to sit back, relax and get brewin!! ENJOY
