One of the great joys in life... MUSIC.

In less than 20 hours I am going to be headed back to my favorite city in all of America… the one and only New Orleans! Last time I was there was in 2010 during the holidays to work with Habitat for Humanity, this time it is for less altruistic reasons… JAZZ FEST! It got me thinking about my love for music and how much it has played a role in my life.

Wherever I travel it seems to be the universal language. My tastes change from time to time, but mainstays like Stevie Wonder, The Beatles, Steely Dan have been with me for a long, long time. Heck… we even play music in our kombucha space so that the kombucha cultures can truly be “cultured” in music. So don’t be alarmed when you go to purchase a Kombcuha Brewing Kit from us, and out of nowhere your SCOBY starts singing “Love Me Do”.*

Heads (and body/arms/legs/torso) Up! — this is a pretty long newsletter, because.. well there is A LOT going on! I thought it would be good to share both our successes and failures with the kombucha nation to let them know what is going on with us. if you just came to the site to pick up some tea and/or learn a wee bit more about kombucha feel free to just look at the pretty pictures and move on. However, if you do get excited by a small sized company (and an above medium sized human) – taking the time to share with you how we spend our day, grab a glass of water (or k tea) and read on..

It is amazing that our site is called Get-Kombucha, but the best part of it is that we are the ones that get to GIVE! I swear this is one of the parts that makes me feel like I have the coolest gig ever.. As you may or may not know, this is the THIRD year in a row we have sponsored ARC. National Kombuchaholic Month

It seems like now a days every person, place and thing has a holiday (don’t believe me). So I am officially claiming this May (as in right now) National Kombuchaholic Month. It makes sense since May 8th is Mother’s Day!! (get it?).

The idea is really help spread the word about the wonders of kombucha. So start bringing the funky tea on the subway and start passing it out (or just share this blog or the kombucha website with your friends).. oh yeah you can also click the facebook like button on the bottom or join our fanpage on facebook by clicking on my smiling mug in the upper right hand corner of this site.

.
As for as orders go in the month of May, be prepared for CRAZY AWESOME SURPRISES WITHIN RANDOM ORDERS! (love letters, never released tinctures, even samples of our sold out Magic Vine Tea… all free!).

We’re also working on new TEA-shirt and mug designs that read Certified Kombuchaholic in the near future. This might take some time to get off the ground but in a few years from now, when the post office is closed and you get the entire month off from work due to the National observance of Kombucha Month, remember who started it all baby!

Customer Communication

As our company grew – so did our way we communicate. In the good ole days when I first started – I would chat with each and every customer for about a half hour (my longest conversation was over 2 HOURS!) – in fact the first couple of months I would personally hand deliver our kits AND personally set up the first batch right along with them… keep in mind back then we had 12 sales a month!!

Though our sales have grown since then, making it impossible for me to show up at your house (then again you never know!) – we do try to continue that personal touch with our customers. To ensure that you get treated above and beyond I thought this would be a good place to review the best way to contact us for a given situation.

1. CUSTOMER SUPPORT: support@getkombucha.zendesk.com
This is the ONLY place that will ensure you will receive a personal response. The reason for this is simple organization, you see we partnered up with zendesk’s “support ticket” system to ensure that we never lose or misplace an email or blog comment ever again. So- if you are checking up on your order, if you want to order, if you want to get a hold of me, if you have a question that you want us to answer, this is THE place to do it!

2. BUILDING A COMMUNITY: this blog
I have already said it a bunch of times but it is worth saying again. THIS BLOG IS NOT MEANT FOR CUSTOMER SUPPORT. IT IS MEANT FOR COMMUNITY SUPPORT. From time to time I may jump in and respond to a comment, but mainly I will just be posting articles like this one. The only way we can build a strong community, is to have everyone participate.. so by all means, please continue posting a question if you have one on this blog AND do expect it to get answered.. only not by me 🙂 — I would much rather have someone else who has been brewing for a bit to share their experience.. this is how we grow together.

I also agree that it is extremely unorganized. The problem is that it has been built on the wordpress.com platform and not the wordpress.org platform (remember I put this up a long long time ago when my computer skillz were actually less than they are now.. which is really, really bad!) – the wordpress.com platform is very limited into what you can do — any techies out there that want to help out making this site look great… without losing its awesome organic search rankings, hit me up (and remember the best way to hit me up is at support@getkombucha.zendesk.com). I would much prefer to work with someone within our community, but if no one heads the call I will make sure that this blog gets a face lift very soon. I kind of have a love hate relationship with it, because it is one of the reasons we have been so popular online (we are the number one ranked kombucha blog online according to google) – but I dread the design and functionality as much as you. Even typing these posts take 4 times as long as compared to the What The Friday Blog.

3. LEAVE A MSG AFTER THE BEEP: our phone number
Yes. We do have a phone number… we LOVE hearing your beautiful voices and it is a nice resource for those who wish to place an order directly over the phone or feel like they need to speak instead of type. However, if you do decide to call, please make every effort to also send us a support ticket as well, to ensure a faster response time.

I wish I can say there is a better reason, but we simply do not have the man/woman/robot power to handle our recent call volume. If it is a time sensitive manner (changing your order, etc) please send in that support ticket. If you were calling to just sing to me.. please continue doing so as I will soon compile all of them to make a mix tape! – I particularly love anything from the 80’s.

Also keep in mind that it is a msg service, so be sure to tell us what time zone you are in so when we call you back it isn’t 3am where you are.

4. FREE RESOURCES: we have a lot!
You may be able to find the answer to you question, by simply checking out our free resources. This blog is packed full of them.. HINT: use the search feature to the right to speed up your findings. Go back to our free 7 day mini course and re-read it.. not for the spelling errors, as I already know there is a ton there. This Pretty Much Sums It Up!

I. Am. An. Idiot. (but a very optimistic idiot)

So for those that have been with us for awhile, you may have noticed a major thing missing from our site… it is one of the things that had made me most proud and I have no one to blame but myself.

I LOST 5 YEARS WORTH OF CUSTOMER TESTIMONIES IN 34 SECONDS

Here’s What Happened. I was playing around with the getkombucha.com website with a friend of mine only a few weeks ago. I just finished the 7 Day Kombucha Mini Course AUDIO Program which will be a nice compliment to the online course for the peeps that prefer to listen to their information rather then learn visually (plus ever since I moved to Los Angeles I know first hand how many people are stuck on the road during rush hour.. so why not learn a bit more about kombucha during the commute).

.
Long Story Short. So while we were going to ask our web guy to install the database on the website to deliver the audio part to the course I decided to take matters into my own hands and set it up myself. That turned into completely deleting the customer testimony database on our kombucha continuous brewing systems!!!

.
Seeing The Kombucha Glass Half Full. Losing these testimonies was like loosing a bit of my life for the past 5 years. From time to time I would got to my website and read the reviews and testimonies whenever I needed a little inspiration or boost to reconfirm what I have been placing my focus on. Knowing that there are real people out there that have gained benefit form my passion is such an incredible feeling, and to have it vanish in a moment felt like getting a rug pulled out from under me (and the fact that it was my stupidity that did it felt like a huge rug getting pulled out.. like wall to wall carpet or something). But as the saying goes… “When one door closes another one opens.”

I have been wanting to take our reviews to the next level for a very long time now, but I kept putting it off. The way we were doing reviews and testimonies were pretty much ancient via text. The problem with this is that how does someone really know for sure who is typing this review?
.
I know when I go to other sites, and see just typed testimonies, there is sometimes a little birdie (or penguin), that is suspicious on who actually typed that testimony. For those that do not know, I consult for other online businesses, and for years I have been telling them that they need to make the effort to get as many pictures, audio and best of all video of their actual customers, because that is how you connect to with someone (aside from having people knock on your door to show that you are a real person). I am ashamed to say that I have not been practicing what I preach.

Quality vs Quantity. Last I checked we had OVER SIX HUNDRED TESTIMONIES (ahem, until I deleted them all). But you know what? I believe that simply a few select customers who are willing rise to the occasion and share their experiences of our site and products with the world on video will is going to make a much bigger impact in helping someone decide if this is the right choice.

What Up With Jiaogulan?

As many of you know, we have started another itty bitty website called Benefits ofJioagulan, which also documents my trip to Thailand and from time to time have the Magic Vine Tea Formula Kits.

We ended up (again) selling out within the first 24 hours BUT we have put up a “Cut The Line” sign up form which will give you first dibs as soon as we receive a fresh crop from Thailand. I think next time I will only offer these kits to those on the list before even announcing it to the web b/c I know it can be disappointing to really want something only to find out that someone has already taken the last one.

Customer of the Month - Nina Joy

As I mentioned earlier in this post, one of my favorite things that I don’t get to do as much as I used to, is to personally connect with our readers and customers. Nina Joy is an example of WHY I love it so much!

.
A Delightful Coincidence. I connected with Nina right around the time my sister Amy was pregnant with my now one year old awesome niece Juniper. Now, personally my perspective on intuition and things happening for a reason changes from time to time, but whatever your thoughts are on that let’s just call it a “Delightful Coincidence”, as I soon found out that Nina, in addition to being an outstanding customer and fellow kombuchaholic, also is an expert, coach, and author on fearless and pain free child birthing.

.
Wide Awake and On The Go. In addition to helping people experience pain free child birth, Nina has also produced several guided mediation programs and courses (which is great for me and the rest of the peeps that are not child birthing any time soon!).

.
A few months ago Nina sent me one of her guided meditations as a personal gift. What I loved most about it was that it was short enough that I could listen to it whenever I needed a little pep AND unlike other guided meditations that sometime relax you to the point of falling asleep, this one got me feeling alert and happy!

The Great Kombuca Balancing Act February 6, 2011

This article will help answer many kombucha troubleshooting questions… I could hype it up with a few extra paragraphs, but I would rather have you kids dive in.. (plus I am trying to meet up with friends for karaoke tonight)! So below is Just The Meat (or tofu, for the veggies out there!)…

HOW TO DECREASE THE RATIO OF YEAST TO BACTERIA (AKA INCREASING THE RATIO OF BACTERIA TO YEAST)

So this is for peeps that want to increase the bacteria found in their k-tea.. which is also the same as decreasing the yeast strands.

.
Usually a sign of low bacteria is consistently not having a new culture grow (I say consistently because a batch or two of not a new culture is fine, especially if your tea is still fermenting but if a new culture is not forming on top or the existing culture is not growing AFTER SEVERAL CYCLES than most).

.
HERE’S SOME NERDY STUFF…

.
The bacteria rely on the yeast for alcohol and glucose. Beyond this they need oxygen and trace amounts of nutrients that they can get from the air and tea. So by supplying alcohol and glucose we can reduce the bacteria’s reliance on the yeast.

.
Yeast can usually withstand much wider extremes in temperature but we can still pick the optimum temp for the bacteria where the yeast tends to be more sluggish. This bacteria sweet spot tends to be in the 65 to 75 Fahrenheit range.

.
HERE’S WHAT YOU NEED TO DO…

.
Use more Green Tea over Black Tea. As much as we love our Kombucha Tea Blend, in this case we would recommend using a straight Green Tea Kombucha Blend. Our personal favorite is Dragon Well Green Tea Kombucha.

.
Use more acidic starter. You can do this by simply using over ferment k-tea (the longer you let it ferment, the more acidic the starter tea will become). It should be very close to vinegar in terms of taste and smell. Depending on how strong the starter tea is you can use as little as 10% (instead of the normal 15% to 20% we recommend in our basic instructions).

.
Keep the temperature between 65 to 75 Fahrenheit. We recommend using our kombucha heat mat especially during winter months to achieve this.

.
Use starter that is taken off the top of any standing ferment to insure you pull from where the bacteria to yeast ratio is the highest.

.
Squeeze the juice of any new cultures you won’t be saving into the new ferment or where you store your starter. (very nice little secret, shhh…. don’t tell anyone… ok, fine, you can tell people, but let them know you the down low info from thekombucha site around!)

.
Use weak rather than strong tea strength. Strong tea provides more sterols that the yeast needs to reproduce. If they don’t get these compounds from the tea they must manufacture them their selves and this will slow them down insuring the bacteria remain more dominant. To keep it simple.. you can either cut you current steep time in Half OR use only 2/3rds the amount of tea you currently use. (I would recommend using the same amount of tea and cutting your steep time in half.. this is because green tea is less oxidized than black tea and requires less steeping time in general.. otherwise it will tend to be bitter.. and yes; I am a tea dork!).

BONUS – HOW TO GROW A HUGE A** CULTURE…

.
Use the same techniques above (ie, type of tea, temp, etc)

.
Start with a portion of newly fermented tea and place it in a fermenting container so that you have at least four inches of liquid depth.

.
Allow fermentation to continue for 3 more weeks.

.
At the end of three weeks, if a new SCOBY has formed discard and filter the contents with a paper towel or coffee filter. If you can find a way to syphon just the top clear portion of the liquid this is preferred but it’s not critical because at this point the yeast have mostly died off or gone dormant.

.
So what we are trying to do is build up the starter tea to have more bacteria than yeast by letting the tea over ferment and then literally straining the yeast out.

.
Rinse and wipe clean the container. Then replace the filtered liquid back into the container and continue to ferment for another couple of weeks or until the culture gets to approximately a 12 cm (1/2″) in thickness.

.
Now you’re ready to begin fermenting with your new healthy culture.

.
HOW TO INCREASE THE RATIO OF YEAST TO BACTERIA (AKA DECREASING THE RATIO OF BACTERIA TO YEAST)

.
Use more black tea.

.
Pull starter from the bottom of the previous brewed ferment and use plenty of it.

.
Be conservative on sugar. It’s best to start out with a little less sugar and then add more after the ferment has proceeded a few days. This is because once the yeasts break down the sugar into glucose, if too much is in solution the yeast can become sluggish and reproduce more slowly. Home brewers commonly know this as the “Crab tree Effect”.

.
Here is a quick Getkombucha.com exclusive guideline to show you how to “sugar pace” your sugar (again this is just a guideline, but it will give you a better idea of what we mean of “sugar pacing”, to prevent the crab tree effect.

.
To prevent your yeast from passing out on the job, gradually add the normal amount of sugar over the course of three days. This allows the yeast the chance to keep up with the amount of glucose present in the nutrient solution.

.
Note: all measurements based on 1 cup of sugar per gallon of tea solution (if making 2 gallons at a time simply double the amount, etc).

.
* Day 1 – add 1/8th of a cup of the sugar
* Day 2 – add 2/8th of a cup of sugar
* Day 3 – add 3/8th of a cup of sugar
* Day 4 – add the remaining 2/8th of a cup of sugar

.
Keep the temperature in warmer 75 to 85 Fahrenheit temperature range. We recommend using our kombucha heat mat especially during winter months to achieve this.

Ahhh, the joy of experimenting! Simply get two separate jars, and label one “Decrease Yeast” and the other “Increase Yeast”.. (well you can also name them Charlie and Henry, but you get the idea).

.
Then follow the suggestions on each separate jar and run your own experiment.

.

Hi Dave:

I just bottled my first brew and it felt great to produce this wonderful
product.

My question has to do with the Scoby that came with my continuing
brewing system. It floated to the bottom from day one. I tried to place it
on the top again after bottling, but it sank to the bottom again. Is this
normal?

Another Scoby started to form on the top, but when I pored in a new
batch on top that Scoby buckled under the pressure, so I tried my best to
unfold it to allow it cover the entire top again, is that normal?

Hi Holly,

Your first question.. we spoke about this a few other times.. whether sink or swim,, it’s
all good! – This has to do more with the density of the culture rather than the health
of it.

.
The only difference is that if the culture sinks, there is a greater chance (over time), that
a new culture will slowly form… which leads us to your second question.

.
Best. Segue. Ever. Huh?
.
This comes down to a matter of Focus and Timing.. with a little ingenuity sprinkled on top.

.
FOCUS: First decide if presently it is more important to create a new layer of SCOBY
or to make more kombucha tea.

.
If you are jonesin’ for the buch and your current culture is extremely healthy, pour the tea on and
simply discard the thin film. If it is too thin it will not continue to grow unless you spend a ton of time
positioning it to float again on top.. but none of this should matter as long as you current culture is
strong.

.
TIMING: Now I know that some of us grow quite fond of our new born scoby babies, so you
could also do the following… Time you brew cycle so that you do not add anymore tea on until the new
culture is thick enough to be a full on culture and can handle a little pressure of sweet tea being poured
on top of it.

.
THE CONTINUOUS BREWER ADVANTAGE: One of the cool benefits of using one of our Kombucha
Continuous Brewing Systems, is that you can both dispense and bottle without ever disturbing the cultures!

.
Say for example in your situation where it was time to bottle and you wanted to make a new batch of tea.
All you would do is bottle down till the premeasured spigot line (for more info we have created a full video
showing you the refill line that comes with your purchase of a brewing system), and wait a few extra days
for the culture to thicken up before adding the new tea.

.
This way while you wait for your culture to get all growns-up (maybe he/she will go to college and back pack
through Europe for a summer or two), you will be enjoying your bottled k-tea!

Continue on with your weekend with a little more profoundness and happiness in your spirit 🙂 I feel so blessed right now… Also speaking of feeling blessed. Shout out to my sister who just gave birth yesterday to a beautiful baby girl. Can’t wait to go back to NY and see them… (still trying to grasp the fact that I am an uncle!).

I know I have been a traveling wilbury** for the past month or so (and the saga continues tomorrow morning when I head to Orlando to walk on hot coals, but more on that in a bit), all of which is part of my commitment to make 2010 the best year for getkombucha.com and our awesome customers!

I thought doing a monthly newsletter would be a good idea to keep our customers completely “in the know” of the happenings… man there is a bunch of exciting stuff. Buckle Up and Turn on the Airbags, here we go…

CHARITY: (i.e. My personal favorite)

I rang in the new year by flying down to New Orleans to volunteer with Habitat For Humanity. I did this for a 3 reasons:

1. Ever since hearing about Katrina I have wanted to physically go down and help out. Donating money is wonderful and I also think donating time and action is just as (and sometimes more) important.

2. I have (well had), no carpenter skills whatsoever. The joke was that I would hit the nail on my finger more than the nail that goes into the house. It has been a skill set that I have been interested in developing for awhile, so I thought why not learn on the job and help give a gift while I’m at it! .. note: I am now a nail putty and door frame painting expert 🙂

3. In a word: Jazz!

I am so grateful for the time I had and also for the other volunteers I met during my time. HUGE shout out to all the Georgia State Students. These guys chose to spend their winter break helping out.. man I wish I was that awesome back in college. Youtube vids are coming soon… in the mean time here are some pics.

The ARC Walk Of Independence

We are so proud that this is the SECOND YEAR IN A ROW THAT YOU WILL BE SPONSORING THIS AMAZING WALK.

I say YOU because in Jan I stated that 5% of all sales thru Feb will go the foundation. Me (and whoever else I can convince to wake up at 6am on Saturday), will be personally there on March 27th and I am so proud to rock their shirt again with our kombucha company on the back (their shirt is ALMOST as good as ours!).

Last week we broke our “most sales in one day” record (shattered it in fact) – frankly we were a little overwhelmed. There was the “we have how many orders today?” type of overwhelmed…

and there was also.. “man we are so grateful that we get to help and enable people” type of overwhelmed. It is a VERY NICE type of overwhelmed! Here are some pics of that (long/intense/awesome/grateful) day.

THAILAND AND NEW PRODUCT COMING SOON…

For those that do not already know… I was in thailand last month. Basically this is how it went.

1. Dave found an awesome thing on the internet (this is after spending a bunch of cash on several potential awesome things and being let down over and over when they arrived… ie it tasted like poo.. uh not that I know what poo tastes like, but you get the point).

2. Dave found that much like getkombucha.com this company was also an itty bitty yet moderately awesome biz – except they were in Thailand.

3. Dave decided to stop finding things and just jump on a plane to Thailand and GET IT for our customers (that and learn about how to actually use it to ensure long term success).

That’s it in a nutshell. Where big corporations might take a few months and lots of filled out forms to ok a trip, being small (and renegade) sometimes helps.

We are still in talk with customs and it would not be fair to speak about it before I know for sure, but this could be HUGE!

I will keep you posted as everything is played out (please keep your fingers/toes/arms/eyes crossed)!

WHAT THE FRIDAY! and TONY ROBBINS

We will continue on with season 3 of the WTF! (what the friday!) episodes. Originally season 3 was going to focus on Health and Wellness (one of my favorite things… can you tell!). However, tomorrow morning I leave for a 4 day intensive Tony Robbins Retreat.

What ever you think about Tony or the personal development field, I can only speak of my personal experience and say this stuff works (believe me I am more analytical than I’d like to be, but it is true.. I have done the math and I achieve more financial/health/life success when I follow this stuff.

This stuff though can be as simple as writing down on a piece of paper “what is the most important action I can take today to reach my goal” and only write down that one step. In other words it does not have to be spending a bunch of cash to go to an event like this.

Why am I telling you this?

Because I decided since I am spending a bunch of cash on this, why not share it with those who might want this type of stuff and for whatever reason can not presently get it (money, time, space restrictions).

so…

Every night I will share the strategies I learn by recording a bullet point recap of the day (I am pretty sure it is illegal to video the actual classes, but I don’t think I am restricted to what I do afterward).

I will release it in 4 segments as Season 3 of WTF! and then Health and Wellness Success Strategies will be season Four.
