Kombucha Tea, Cultures, Benefits and Hazards

Truth or Dare? … things are about to get really really fun! October 12, 2011

Fair Warning: This email is loong and mushy. It’s
not really on a Kombucha Mushroom or a
Kombucha Recipe but on how to get Happiness for
75 cents an hour.

.
For a few months now I have been teaming
up with my talented friend Theresa and performing
custom made Beatles songs to random people.

.

.
The person answers a few questions, like:

What song they would like me to cov
Who’s it for and what’s the occasion
Anything they want me to add or mention

.
I then take this information and learn the original
song on guitar, then re-write the lyrics, then print
them up to send to Theresa, who comes over that
week to rehearse and film the live performance.

.
But Wait There’s More. I then upload the video
to my computer, edit it (this is me, the same guy
who accidentally deleted close to one thousand
reviews on our site, so even something as simple
as uploading a video take a looong time), and
finally upload it on YouTube.

.
All in all, it is about 3 hours of work.

.
What I forgot to mention is that we get paid
for these gigs. It varies a little bit on how long
the song is, but we do a 30 sec vid for a
whopping FIVE BUCKS!!

.
Oh yes.. that’s total, and after the fee that
the site takes from connecting us it comes
out to 4 Bucks… Total!

.
Which is 2 Bucks each or…
Seventy Five Cents Per Hour!!!

.

.
So by now you are probably asking,
heck screaming…

.
“Dave, Why Would You Do This?”

.
The answer is pretty simple actually.
It’s because
I LOVE IT!

.
It reminds me how I felt 5 years ago when I was
just starting getkombucha.com

.
You have to remember that back then kombucha
was just getting popular online, and everybody
thought I was CRAZY*.

.
My family and friends were supportive and happy
to see me so passionate, but they could not
understand why I was so excited about something
that, at the time, was bringing in enough money
to barely cover my rent check.

.
And while money is one great measure of
success, one can argue that happiness is
perhaps an even greater measure.

.
Over the past 5 years, I have come to the understanding
that is is not specifically Kombucha that has ignited my
passion, but the fact that THRU Kombucha I have been
able to help people and increase their happiness… which
in return increases my happiness.

.
And it is with that last statement that a light bulb** went
off in my mind!

.
I began with a question… (I have learned thru the years
that questions can be crazy powerful, like Mr T. I Pitty
The Fool powerful!).

.
I asked…

.
“What Else Can I Do To Increase The Happiness Of
My Peeps?”

.
I use the term “Peeps”, b/c I would like to believe that our
relationship is more than what the others view as “customers”.

.
In the past I have done tons of sales and promotions, which
are nice (I mean everyone likes to save money on awesome
stuff, right?) – but this time I thought what else can I do.

.
So, naturally I asked another question, this time a little
more trippy…

.
“What haven’t I thought of beyond kombucha and money that
will cause happiness more than any other time?”

.
I asked this question when I was in a really good state/mood.

.
In fact, it was right after Theresa and I finished doing some
Custom Beatles Songs and I said:

.
“I should do this for my Kombuchaholics on the newsletter!”

.
To which T responded…

.
“You totally should. I dare ya!”

.

.
So naturally I am going to do just that!!

.
Here’s The Thing. Our new website will be launch in a few
weeks.. and I have been working at things that I really don’t
enjoy like, setting up merchant accounts, ssl servers, new
copy, and the dread of loosing 5 years of SEO rankings…

.
They are not horrible things.. I mean I would do them over,
let’s say laundry, but I would much rather add value to this
world thru other ways like.. more kombucha videos, products,
support, and yes.. Beatles Songs!

.
So I decided to take a break.. and by break I don’t mean Hawaii,
I mean committed to giving you the gift of song 🙂

.
So Here’s The Deal!

.
I will write, play, sing, and record for you a custom made 30 second
one of a kind Beatles song of your choice to the next 42 orders that
come in.

These orders can be on anything.

Bottled Kombucha Tea
Kombucha Extract
Essential Life Tinctures
Kombucha Cultures
Kombucha Brewing Kits
Kombucha Heat Mat
Kombucha Tea Blend
Anything.

.
And if one of the next 42 orders are for a Continuous Brewing System I will
bump it up to a Full Length Beatles Song!

.
This Is Awesome, What Do I Need To Do?

Just write in the comment section what song you’d like, what are some
things/ideas you’d like the lyrics to include, and who’s it for.

.
So It Can Be For Anyone?
Yep! Friend’s birthday coming up? Why not give them the best
gift ever. Forgot your anniversary? What better way of saying
sorry than thru song. 🙂

.
What Happened To The Typical Free Shipping or 15% Off Approach?
Those things are great, and we will def be having more of those things
to in the future, but at the heart of this the focus is less about promoting
a product and more about promotion happiness.

.
So let me be clear. Please DO Not make a purchase unless you have
already been considering it before reading this email now.

.
Happy Brewin’!
Dave 🙂

.
PS: If you are the next 42 orders just write in the comment section at
checkout what Beatles song you’d like, what are some things/ideas you’d like
the lyrics to include, and who’s the song is for and we will rock it for you!

.
* – well my friends and fam still think I’m crazy but now because I
wear those five finger toe shoes and use a neti pot.

.
** – energy saving fluorescent, of course. 🙂

The Great Kombuca Balancing Act February 6, 2011

This article will help answer many kombucha troubleshooting questions… I could hype it up with a few extra paragraphs, but I would rather have you kids dive in.. (plus I am trying to meet up with friends for karaoke tonight)! So below is Just The Meat (or tofu, for the veggies out there!)…

enjoy.

HOW TO DECREASE THE RATIO OF YEAST TO BACTERIA (AKA INCREASING THE RATIO OF BACTERIA TO YEAST)

.
So this is for peeps that want to increase the bacteria found in their k-tea.. which is also the same as decreasing the yeast strands.

.
Usually a sign of low bacteria is consistently not having a new culture grow (I say consistently because a batch or two of not a new culture is fine, especially if your tea is still fermenting but if a new culture is not forming on top or the existing culture is not growing AFTER SEVERAL CYCLES than most).

.
HERE’S SOME NERDY STUFF…

.
The bacteria rely on the yeast for alcohol and glucose. Beyond this they need oxygen and trace amounts of nutrients that they can get from the air and tea. So by supplying alcohol and glucose we can reduce the bacteria’s reliance on the yeast.

.
Yeast can usually withstand much wider extremes in temperature but we can still pick the optimum temp for the bacteria where the yeast tends to be more sluggish. This bacteria sweet spot tends to be in the 65 to 75 Fahrenheit range.

.
HERE’S WHAT YOU NEED TO DO…

.
Use more Green Tea over Black Tea. As much as we love our Kombucha Tea Blend, in this case we would recommend using a straight Green Tea Kombucha Blend. Our personal favorite is Dragon Well Green Tea Kombucha.

.
Use more acidic starter. You can do this by simply using over ferment k-tea (the longer you let it ferment, the more acidic the starter tea will become). It should be very close to vinegar in terms of taste and smell. Depending on how strong the starter tea is you can use as little as 10% (instead of the normal 15% to 20% we recommend in our basic instructions).

.
Keep the temperature between 65 to 75 Fahrenheit. We recommend using our kombucha heat mat especially during winter months to achieve this.

.
Use starter that is taken off the top of any standing ferment to insure you pull from where the bacteria to yeast ratio is the highest.

.
Squeeze the juice of any new cultures you won’t be saving into the new ferment or where you store your starter. (very nice little secret, shhh…. don’t tell anyone… ok, fine, you can tell people, but let them know you the down low info from thekombucha site around!)

.
Use weak rather than strong tea strength. Strong tea provides more sterols that the yeast needs to reproduce. If they don’t get these compounds from the tea they must manufacture them their selves and this will slow them down insuring the bacteria remain more dominant. To keep it simple.. you can either cut you current steep time in Half OR use only 2/3rds the amount of tea you currently use. (I would recommend using the same amount of tea and cutting your steep time in half.. this is because green tea is less oxidized than black tea and requires less steeping time in general.. otherwise it will tend to be bitter.. and yes; I am a tea dork!).

kombucha and richord simmons

.
BONUS – HOW TO GROW A HUGE A** CULTURE…

.
Use the same techniques above (ie, type of tea, temp, etc)

.
Start with a portion of newly fermented tea and place it in a fermenting container so that you have at least four inches of liquid depth.

.
Allow fermentation to continue for 3 more weeks.

.
At the end of three weeks, if a new SCOBY has formed discard and filter the contents with a paper towel or coffee filter. If you can find a way to syphon just the top clear portion of the liquid this is preferred but it’s not critical because at this point the yeast have mostly died off or gone dormant.

.
So what we are trying to do is build up the starter tea to have more bacteria than yeast by letting the tea over ferment and then literally straining the yeast out.

.
Rinse and wipe clean the container. Then replace the filtered liquid back into the container and continue to ferment for another couple of weeks or until the culture gets to approximately a 12 cm (1/2″) in thickness.

.
Now you’re ready to begin fermenting with your new healthy culture.

.
HOW TO INCREASE THE RATIO OF YEAST TO BACTERIA (AKA DECREASING THE RATIO OF BACTERIA TO YEAST)

.
Use more black tea.

.
Pull starter from the bottom of the previous brewed ferment and use plenty of it.

.
Be conservative on sugar. It’s best to start out with a little less sugar and then add more after the ferment has proceeded a few days. This is because once the yeasts break down the sugar into glucose, if too much is in solution the yeast can become sluggish and reproduce more slowly. Home brewers commonly know this as the “Crab tree Effect”.

.
Here is a quick Getkombucha.com exclusive guideline to show you how to “sugar pace” your sugar (again this is just a guideline, but it will give you a better idea of what we mean of “sugar pacing”, to prevent the crab tree effect.

.
To prevent your yeast from passing out on the job, gradually add the normal amount of sugar over the course of three days. This allows the yeast the chance to keep up with the amount of glucose present in the nutrient solution.

.
Note: all measurements based on 1 cup of sugar per gallon of tea solution (if making 2 gallons at a time simply double the amount, etc).

.
* Day 1 – add 1/8th of a cup of the sugar
* Day 2 – add 2/8th of a cup of sugar
* Day 3 – add 3/8th of a cup of sugar
* Day 4 – add the remaining 2/8th of a cup of sugar

.
Keep the temperature in warmer 75 to 85 Fahrenheit temperature range. We recommend using our kombucha heat mat especially during winter months to achieve this.

.
“HEY DAVE, WHAT IF I DON’T KNOW WHICH RATIO I SHOULD INCREASE OR WHICH ONE I SHOULD DECREASE?”

.
Ahhh, the joy of experimenting! Simply get two separate jars, and label one “Decrease Yeast” and the other “Increase Yeast”.. (well you can also name them Charlie and Henry, but you get the idea).

.
Then follow the suggestions on each separate jar and run your own experiment.

.
If you want extra bonus points (and be the new celebrated member of our kombucha komunity)… why not pot your results in the comment section below so that you can help others!

Also if you need to pick up some cultures or grab some any one, tow, or ten of our amazingly (yes, that’s a word), huge selection of tea… feel free to check out our Kombucha Tea and Kombucha Cultures.

Ask Dave #12 – Kombucha Culture Care Tip #9 October 13, 2010

Hi Dave:

.
I just bottled my first brew and it felt great to produce this wonderful
product.

.
My question has to do with the Scoby that came with my continuing
brewing system. It floated to the bottom from day one. I tried to place it
on the top again after bottling, but it sank to the bottom again. Is this
normal?

.
Another Scoby started to form on the top, but when I pored in a new
batch on top that Scoby buckled under the pressure, so I tried my best to
unfold it to allow it cover the entire top again, is that normal?

.
Thank you,
Holly

====== DAVE’S RESPONSE (hey that’s me!) ==========

Hi Holly,

Your first question.. we spoke about this a few other times.. whether sink or swim,, it’s
all good! – This has to do more with the density of the culture rather than the health
of it.

.
The only difference is that if the culture sinks, there is a greater chance (over time), that
a new culture will slowly form… which leads us to your second question.

.
Best. Segue. Ever. Huh?
.
This comes down to a matter of Focus and Timing.. with a little ingenuity sprinkled on top.

.
FOCUS: First decide if presently it is more important to create a new layer of SCOBY
or to make more kombucha tea.

.
If you are jonesin’ for the buch and your current culture is extremely healthy, pour the tea on and
simply discard the thin film. If it is too thin it will not continue to grow unless you spend a ton of time
positioning it to float again on top.. but none of this should matter as long as you current culture is
strong.

.
TIMING: Now I know that some of us grow quite fond of our new born scoby babies, so you
could also do the following… Time you brew cycle so that you do not add anymore tea on until the new
culture is thick enough to be a full on culture and can handle a little pressure of sweet tea being poured
on top of it.

.
THE CONTINUOUS BREWER ADVANTAGE: One of the cool benefits of using one of our Kombucha
Continuous Brewing Systems, is that you can both dispense and bottle without ever disturbing the cultures!

.
Say for example in your situation where it was time to bottle and you wanted to make a new batch of tea.
All you would do is bottle down till the premeasured spigot line (for more info we have created a full video
showing you the refill line that comes with your purchase of a brewing system), and wait a few extra days
for the culture to thicken up before adding the new tea.

.
This way while you wait for your culture to get all growns-up (maybe he/she will go to college and back pack
through Europe for a summer or two), you will be enjoying your bottled k-tea!

.
Happy Brewin’
Dave 🙂

Kombucha Real Personal Experience #19 August 24, 2010

For many of us, we drink kombucha b/c we simply enjoy the taste. Or perhaps we like the fact that it helps digest our food a bit more and gives us a pick me up during the day.. or maybe it even helps with our occasional hang over.

.
The thing is, that it is not doing crazy miracles (well except the hangover remedy.. that is pretty miraculous in my book). When I started this company it was not b/c I believed that kombucha would make me fly or have super human strength. No it was b/c after drinking a bottle while at a busy-and-over-indulgent lunch it was the first time in years that i did not need to take my pharmaceutical acid reflux meds.

.
I know kind of boring huh? But that was my deal. I never experienced massive weight loss (probably b/c I wasn’t over weight to begin with), it never cured me of any “incurable” disease, and if you have ever met me the last thing I need is something to increase my energy levels 🙂

.
Ha ha – I know this is a pretty lousy way for a business owner to promote his product, but it’s the truth… I just liked the taste and like how it made me feel on a subtle level especially with digestion…

.
Which Makes Me Enjoy These Personal Experience Emails Even More!

.
ok – I am about to walk a tight rope with the FDA right now.. but I can not imagine how I can get in trouble for the truth so here we go:

.
Just because I have never experienced the most AWE—some miracles, does not mean that others have not, so I decided to begin sharing again the personal stories that people have shared with me through the years (AHEM.. with their permission of course).

.
Below is the EXACT copy and paste email of a fellow kombucha drinker.. notice I did not say kombucha customer, as I could care less if peeps choose to support our kombucha site or pick some up at a local market (when they have it back in that is).

.
What REALLY matters, is that we get the word out! Kombuchaholics. UNITE!

.
Happy Brewin’,
Dave

Kombucha Real Personal Experience #19

My son has been on monthly chemo for a recurrent brain tumor for 32 months
now. At times he has had to delay the next cycle because of low blood
counts, particularly absolute neutrophils or the immune system.

.
He started drinking Kombucha bottled tea at the recommendation of his sister
who, ironically works at a Whole Foods in Pa. She thought it would help with
some of the “binding” issues that occur during chemo.

.
He started drinking it 14 days before this last cycle. The week before he was
to begin his neutrophils were at 1100, they must be a minimum of 1500 to start
chemo and at 100 they often transfuse.

.
Days later his counts were at 1900 – something that has never happened in the
almost 3 yrs. of chemo and one of the highest counts he has had in years.

His stomach discomfort and nausea were lessened this chemo round as well
due to the cleansing property of the tea.

.
When you speak to ABC feel free to use my son’s case as well. His name Brannon
Thomas Virginia Beach Va.

.
Gail Thomas

==============================================

Thank you so much Gail for giving us permission to re-post this on our blog. I can not make any health claims to this (as it is currently against the law and I have never personally gone through chemo), but I can not tell you how amazing/grateful/joyous/blessed/happy it makes me (and I suspect many others) feel, to know we are be part of something bigger then ourselves!

The real reason kombucha has been removed from Wholefoods… June 28, 2010

Below is what one of our kombuchaholics wrote me and with her permission I am sharing it with the rest of you!! Thanks Vicki!

==================================================================
Dave,

I am in the food manufacturing business. This sounds like one of those silly
regs that makes manufacturers crazy. So, they now have a huge expense in
that none of their existing labels are any good (very expensive, all those
colors and they have to toss them) and they have to make new labels. They
had to ship back product and reship to the store plus the loss of sales
while it’s off the shelf. This is a really big deal for all those Kombucha
manufacturers. Of course, if they were smart, they have insurance and it
should cover the recall. This shouldn’t affect you in any way what so
ever, this is just a glitch and my guess is, the Kombucha will be back on
the shelves fairly quickly with the revised label.

All that said, thank goodness we have our home brewing system! We actually
started a second brewer with one of the baby scoby’s so now, we have as much
as we can possibly drink and we owe it all to you! Many thanks,

Vicki

========================================================

Vicki then wrote to us today the following…

Dave,

Found out more about the pulling of the Kombucha. I was in my health food
store today and they are still carrying. The letter she got from the FDA was
about alcohol content and EXCISE TAXES! We should have known this came down
to money. The FDA is testing Kombucha to see if there is enough alcohol in
it to warrant the special labels and the alcohol tax-plus the stores would
have to have a license to sell it! If it has less than non-alcoholic beer,
hopefully it will pass the test. In the meantime, you may see sales shoot
up!

Vicki

========= Dave’s Response ==================

First off it is so awesome to see other people (especially from our kombucha community), get so involved. Secondly.. yes! sales have been off the charts.. and we are BACK ORDERED for about a week or two. Please still order as we are fulfilling the orders on a first come first serve.. so if you keep waiting it will only be longer.. that said I refuse so ship out anything (especially cultures) until they are full grown and super hero healthy!! I do not care if I loose sales.. as I know I will gain long term awesome loyal customers (just go ask the crazy kombuchaholics that have been with me since the get go.. YOU. GUYS. ROCK!).
